Plant-Based Campus Launches at Södertörn University

In September 2026, Plant-Based Campus (PBC) launched a new campaign at Södertörn University, its 18th campaign so far. PBC Södertörn is a student-led campaign for the university to move towards plant-based catering. It joins existing PBC campaigns at Stockholm University, the Swedish Royal Institute of Technology (KTH) and Karolinska Institutet.
Södertörn University's own sustainability policy says the university will contribute to sustainability through research, education and collaboration. The policy focuses on several of the UN Sustainable Development Goals, including Goal 12 (Responsible Consumption and Production) and Goal 13 (Climate Action). Campus food is one of the most direct ways to act on both.
The research points the same way. A 2024 study in Nature Communications by Anne Charlotte Bunge and colleagues at the Stockholm Resilience Centre, Stockholm University, modelled replacing animal-source foods in the Swedish diet. Plant-based alternative-rich diets cut greenhouse gas emissions by 30–52%, land use by 20–45% and freshwater use by 14–27%, with the vegan scenario showing the largest reductions.
Jessica Lange, coordinator of PBC Södertörn, says:
“I've seen at KTH what a group of students can achieve. At Södertörn we're starting by working with the student union and by learning who makes the decisions about food on campus. We'd love more students to join us.”

The campaign has two first priorities. The team is working with the student union to see what plant-forward changes it can make to its menus. It is also researching the stakeholder landscape, to understand who is involved in food on campus and how decisions are made.
A small team is already in place, and new members are welcome. The team is also expected to cooperate with PBC's existing campaigns in Stockholm, sharing experience with campaigners at Stockholm University, KTH and Karolinska Institutet.
